bone-broth gochujang ground turkey
ground turkey infused with bone broth, simmered down to be wonderfully savory and juicy, accented with the sweetness and spiciness of gochujang
my boyfriend taught me the art of infusing ground meat (beef or turkey) with bone broth to create a version that was not so dry, not too saucy, and fortified with the many benefits of bone broth: collagen, extra protein, and more. i was in awe as we ate it in a tiny cabin in the middle of the dessert of joshua tree on the last leg of our road trip around california. we had it with beef then, though i much prefer turkey for its leaner contents, but i decided to recreate it and make it my own. i found that gochujang was the perfect complement to such an intensely savory thing; the bone broth and turkey becoming one means the joining of the salt and the overall heaviness of meat as a whole. gochujang provides a wonderful balance with its sugar, sourness, and spiciness. it a perfect protein source for stir-fries, bowls, lettuce cups, or anything under the sun. omit the gochujang and add other spices if you want to make it with a different flavor profile! make it your own.

RECIPE
makes: 2-4 servings, depending on individual serving sizes
prep time: 5 minutes
cook time: 30-40 minutes
INGREDIENTS
1 pound ground turkey
one box of chicken bone broth (should be 17 fl oz/ 1 pint)
1 tbsp olive oil; i used graza’s drizzle, use this link or code CLEMSKITCHEN for five dollars off!
half of an onion, diced
3 garlic cloves, minced
1 tsp salt
1/4 cup gochujang
INSTRUCTIONS
heat a large pan to medium-high heat and add the oil
once fully heated, add the turkey, onions, garlic, and salt, and sauté until browned and cooked (roughly 3-5 minutes)
pour in the box of bone broth and reduce the heat to medium
it should start to simmer soon after; stir every five or so minutes and watch as the liquid levels go down
once the bone broth is almost fully gone (there should still be a little bit on the bottom), add in the gochujang and stir until fully combined. let it cook for a few more minutes and take it off of the heat.
serve immediately with anything and everything!
